How to make edible diamonds
Making your cakes and cupcakes more fancy with gems is fun and will make your sweet creation the hight off the party. It might sound difficult but with these instructions you’ll have your cakes sparkling in no time.
What you need:
• One cup Isomalt
• Non stick pot
• Parchment paper
• Oven mits
• Scissors
• Candy making mold
• Latex gloves
• Gel based food color
• Large bowl of ice water
• Vegetable oil spray
Preparing the isomalt
1. Add water to Isomalt in the non-stick pot and stir until it is evenly distributed.
2. Place pot of Isomalt on burner set to HIGH and let it come to a boil.
3. Place candy thermometer in pot.
4. Once all the water is gone, its time to put in your color.
5. Remove the pot from the heat when thermometer reads 165c.
6. Place bottom of pot in the bowl of ice water, once the hissing sounds stop, return pot to burner and set it in the off position.
7. Fold your parchment triangles, prep your cup and molds.
8. Pour the cooled isomalt into your prepared parchment bag using the cup to hold the bag, add about a half cup to the bag
9. Quickly snip off the tip of the parchment bag and start piping into the molds.
10. Let cool 5–10 minutes.
11. Store isomalt in air tight containers at room temperature.
Caution
Always be careful when working with hot liquids. Keep a bowl of ice water near by in case you burn yourself.
