Baileys Chocolate Molten Lava Cakes
INGREDIENTS:
One cup unsalted butter, + extra for the ramekins
Four tea/sp granulated sugar
Two & Half cups confectioners' sugar, + extra for dusting
340gm chocolate, sliced up
One cup all-purpose flour
Six large whole eggs
Six egg yolks
60ml baileys
One & Half tea/sp vanilla extract
Quarter tea/sp almond extract
Half tea/sp ground cinnamon
Pinch cayenne pepper
Pinch nutmeg
METHOD:
1. Preheat oven to 200 degrees. Grease 8 small ramekins with butter and coat each with half a teaspoon of granulated sugar.
2. Over a low heat in a saucepan, mix together your butter, chocolate, cinnamon, nutmeg and cayenne until you have a melted, smooth combination. Allow to cool a little.
3. In a bowl whisk together your flour, whole eggs and egg yolks, confectioners' sugar, vanilla extract and almond extract until you get a creamy texture. Next whisk in your melted chocolate combination and baileys.
4. Pour mixture evenly into your 6 ramekins. Bake for twelve-fourteen mins or until the tops are stiff and the edges go dark. Allow to cool for five mins.
5. Use a small knife to loosen the edges and transfer to dessert plates while still warm. Dust with confectioners' sugar and serve.
