Ingredients needed for the Donuts

• 1/2 cup of buttermilk (this means milk + teaspoon of vinegar)
• 1 and 1/4 teaspoon of pumpkin pie spice mix.
• 1 cup of sugar
• 1/2 teaspoon of salt
• 1 cup of  beer of any choice 
• 2 teaspoon of baking soda
• 2 large eggs (should be at room temperature)
• 4 tablespoon of butter (it should be softened to a room temperature)
• 3 and 1/2 cups of whole wheat pastry flour (you can sub with all-purpose flour if the need arises)

Ingredients for Glaze 
~ 1 cup of powdered sugar 
~ 2 tbsp Oktoberfest beer

Preparation guide 
~ First step: boil beer for ( Wheat beer is best for this recipe ) 20-30 minutes in a small saucepan. The beer will reduce to 1/4 cup after the boiling. 
~ Next step: you should combine salt, pumpkin pure spice mix, baking soda and flour in a mixing bowl, then set aside. 
~ Next step: gradually mix the dry ingredients to the wet ingredients. 
~ Next step: the dough will surely be sticky after the dough has been thoroughly mixed lined 2 baking sheets with parchment paper. It's very normal for the dough to be sticky. 
~ Next step: you have to smear the flour onto the parchment paper. At this very moment, flour is your best friend because the more you use it, the least the dough will stick to the paper: simply use enough flour here. 
~ Next step: stretch the dough to the length of your baking pan with your floured hands. It should be about 1/2 inch thick. 
~ Next step: make the dough a little bit hard by putting it in the freezer for about 20 minutes. 
~ Next step: you should take the dough out of the freezer after 20 minutes, then cut 3 inch circles for the donuts (I usually make use of a wine glass, but you can use anything you have that is handy. You should cut 1 inch circles inside of the donuts. You can use small circle cap or an apple corer.
~ Next step: Roll the dough into a ball after you might have removed the extra scrap.
~ Next step: get about 3 inches of oil in a large pot while the donuts are still in the refrigerator. Once the oil is at 360 degrees, it means the oil is ready for use. You can choose to use a candy thermometer .
~ Next step: you should begin to drop the donuts in the frying oil. You should always remember not to overcrowd them. You should fry until they turn golden brown, then you flip and fry the other side till they also turn golden brown.
~ Next step: you should remove the donuts and place on a paper tower to cool for about a minute.
~ Next step: this step is optional though; garnish the donuts with pumpkin pie spice mix.
