These particular banana fritters are packed with large chunks of cooked banana with vanilla sauce poured on them. They are really tender on the inside.

Ingredients needed:

~ Powdered sugar 
~ Vanilla caramel sauce (this is optional though)
~ ½ vanilla bean seeds (this should be scraped out of the pod)
~ 130 grams of flour (this should be all-purpose)
~ 1 medium banana 
~ Vegetable oil (you need it for frying)
~ 1 tsp of baking powder 
~ 1 egg 
~ ¼ tsp of baking soda 
~ 1 tsp of lemon juice 
~ 1 medium banana (should be very ripe and mashed)
~ 1/8 tsp of salt 

How to prepare:

Step 1: Combine baking powder, baking soda, flour and salt by putting them all into a bowl and then whisk together. 

Next step: get another bowl, get the ripe banana and mash, and then whisk together with the vanilla beans, egg and the lemon juice. It is advisable you make use of an immersion blender because it can speed up the process.

Next step: cut the other banana into cubes after you must have peeled and quartered it lengthwise. You have to add the cubed banana with the dry ingredients. To avoid them clumping together, it is better you toss to coat each piece of the banana with the flour mixture. 

Next step: get 2 inches of oil and pour it on a heavy bottomed pot and heat to 350 degrees F (180). Now, you should make a wire rack lined with a triple layer of paper towels. 

Next step: get the wet ingredients and add to the dry ingredients and ensure the mixtures are combined very well by using a spatula to fold the mixture. Take note: ensure you don’t mix too much because if you do, your fritters will become tough and chewy. 

Next step: get a spoon, add spoonful of batter into the hot oil gently and get it fried on one side until you begin to see the edges turning brown. You should make the other side of the edge brown too by flipping to the other side as you continue to fry. Now, drain the rack you already prepared. 

Next step: you should dust the fritters with plenty of powdered sugar after allowing it to get cool a little bit. It is time to serve. Yes, it is time to serve!!! Kindly serve it warm with vanilla caramel sauce.
