Strawberry Chunk Treats
For 15-16 Strawberry Chunks
Ingredients:
• ½ cup sugar
• 2 egg whites
• 115 grams of chocolate
• 14-16 medium strawberries, hulled
• Marshmallow Frosting
• 4 tablespoons of graham cracker crumbs
• 1 ½ teaspoon of shortening
How to Prepare
1. Using parchment paper line a baking sheet. Using a microwave, heat the shortening and chocolate in a microwave safe bowl in short bursts of 15 second. Make sure you stir after each 15 seconds until the chocolate is fully melted.
2. Dip strawberries in chocolate and place on the baking sheet you prepared earlier.
3. Now make the marshmallow frosting by combining the sugar and egg whites in a stand mixer bowl and place the bowl over simmering water. Heat the mixture to around 70°C and remember to whisk the mixture constantly. Now place the bowl under its stand mixer (fit the mixer with a whisk attachment) and beat the mixture on moderately high speed for about 10 to 12 minutes or until it doubles in volume, cools down and forms stiff peaks.
4. Spoon out the marshmallow crème into to a pastry bag fitted with a close start tip and pipe it into the hulled strawberries. Use a kitchen torch to toast and then serve.
