Kahlua Crunch Balls
What goes together better than Summer + Kahlua - a no-bake recipe involving the two, that's what!! I have discovered a gorgeous way to make these Kahlua Crunch Balls that don't involve you getting hot in the kitchen this Summer. If you're a connoisseur, then you will be happy to note that this recipe was inspired by Kahlua's White Russian - also included for your enjoyment. You will find that the Kahlua is a real star in these balls, decadently crunchy with their coating of espresso beans and almonds! But if you're pressed for time you can always just give them a quick dusting of powdered sugar.
In addition to being quick, easy and tasty, this recipe is also very simple to travel with. Either place them in tasteful, elegant white liners or for the more spirited holiday seasons - switch to the glittery gold ones!!
INGREDIENTS:
340gm confectioners sugar
quarter cup Kahlua
four tab/sp unsalted butter, softened
28gm chocolate covered espresso beans, crushed
28gm almonds, crushed
METHOD:
1. Mix together butter, sugar & Kahlua in a bowl with mixer until well combined. Cover & put in fridge for 4 hours at least or until quite firm.
2. Mix crushed espresso beans & almonds together. Scoop one tab/sp of Kahlua mixture into yr hand at a time and shape into a ball. Roll balls back & forth in espresso mixture until fully coated.
3. Place in your liners. Serve!
*WHITE RUSSIAN
* two parts Absolut Vodka
* one part Kahlua
* one part heavy cream
METHOD:
1. Fill a spirits glass with cubed ice. Add Vodka & Kahlua. Top with heavy cream
