Cherry Ripe Slice

What you'll need

Base:
100g of Arnotts Marie biscuits
100g of butter
1/3 cup caster sugar
1 cup of self raising flour

Cherry Layer:
1 x 400g can of sweetened condensed milk
1 x packet glaced cherries, chopped
250g of desicated coconut
80g of melted copha
Pink food colouring

Chocolate Topping:
200g dark chocolate melts
60g of copha


How to make Cherry Ripe Slice:

Base:

1.  Lightly grease and line a slice tray with baking paper.

2.  Process the biscuits thouroughly to form a fine crumb and pour into a bowl.

3.  Melt the butter and pour over the biscuit crumb, add the sugar and flour to the bowl and mix together well. 

4.  Press the mixture into the tray and bake at 180 degrees for 15 minutes and set aside to cool.

Cherry Layer: 

1.  Combine the condensed milk, cherries, coconut, copha and a couple of drops of pink food colouring in a bowl and mix well. 

2.  Spread the cherry mix over the base, press down and set aside.

Chocolate Layer:

1.  Combine the chocolate and copha in a bowl and place over a saucepan with water simmering.

2.  Pour over the cherry layer and spread evenly.

3.  Refrigerate until set, then using a hot knife slice into rectangles.
