How to make a great carrot cake
Carrot Cake
What you will need
2 1/2 cups of grated carrot
1 cup of self raising flour
1/2 cup of plain flour
1/2 cup of brown sugar
3/4 cup of vegetable oil
1/2 cup of golden syrup
2 eggs
1 teaspoon of bicarb soda
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground ginger
Cream Cheese Frosting:
250g of cream cheese
1/2 cup of icing sugar
1 tablespoon of lemon juice
How to make Carrot Cake:
Cake:
1. Grease a 20cm cake tin and preheat oven to 180 degrees.
2. In a mixing bowl combine the eggs, brown sugar, oil and golden syrup and beat.
3. Sift flours, bi carb soda, cinnamon and ginger into the wet ingredients and stir gently.
4. Stir in grated carrots.
5. Pour mixture into the cake tin and bake for 60 minutes or until a skewer comes out clean.
6. Place on a wire rack to cool.
Cream Cheese Frosting:
1. Combine the cream cheese, icing sugar and lemon juice in a bowl and mix well until smooth.
2. Spread evenly over cooled cake.
3. Enjoy!
