How to Make Creamy Lime Squares
Ingredients for the Crust
• Unsalted butter (Four tablespoons)
• Ground nuts or almond flour (2/3 cup)
• Graham-cracker crumbs (One cup)
• Sugar (One-fourth cup)
• Grated lime zest (One tablespoon)
Ingredients for the Filling
• Two big egg yolks
• Sweet condensed milk (One can)
• Fresh lime juice (Half a cup)
• Fresh lemon juice (Couple of tablespoons)
Directions for Preparation
1. Heat the oven at 175d. Now take a square baking dish (8 inch) and brush it with melted butter. Place its bottom with a parchment paper. However, while doing so, leave couple of inches overhang at its two sides.
2. For preparing the crust, mix ground nuts or almond flour with sugar, zest and graham-cracker crumbs. Add some butter and mix again. Now transfer this mixture to the prepared pan and press the mixture uniformly. Bake it for next 8 to 12 minutes until it becomes light brown in color. Allow it to cool down for next half an hour.
3. For preparing the filling, take a bigger bowl and mix egg yolk & condensed milk together. Now add some lime juice & lemon juice and mix them together till they become smooth enough. Now pour this filling over the crust and smoothly spread them to the edges.
4. Bake it for next 15 minutes till it sets. Place it over a rack to cool down for next one hour prior to serving. Now with the help of parchment paper overhang, remove it from the pan and place it over a cutting board. Take a serrated knife and cut it into 16 squares. However, while cutting it, make sure to wipe the edges of knife with a wet towel.
