Mini Chocolate Cakes


INGREDIENTS

    Chocolate cake:
    3 eggs, at room temperature
    1 and ½ cups sugar
    ¾ cup olive oil
    1 cup milk, at room temperature
    3 tablespoons cocoa powder
    1 teaspoon vanilla powder
    2 cups all purpose flour
    Filling:
    1 and ½ cups whipped cream
    Topping:
    250g chocolate chips
    1 cup heavy cream
    ½ cup fresh or frozen cranberries


INSTRUCTIONS

    Pre-heat the oven to 350F or 180C and line a 9X9 inches the baking pan with parchment paper.
    Combine eggs and sugar with an electrical mixer until rich and creamy.
    Pour olive oil as well as milk and blend together.
    Sift cocoa powder in to the bowl and mix using a spatula.
    Mix flour and vanilla powder in  different bowl and sift all of them into the bowl. Mix using a spatula just until there aren't any pockets of flour.
    Pour the batter into your baking pan and bake for 15-20 minutes or until an inserted toothpick comes out clean.
    At the same time bring the cream to a simmer in a very small pot and pour it over chocolate chips inside a bowl. Wait for couple of minutes and whisk collectively until chocolate melths and you've got a smooth chocolate sauce. Allow it to cool at room temperature.
    Go ahead and take cake out of oven and let it cool.
    Eliminate circles by using a cookie cutter. You decide on the size of the cookie cutter.
    Dollop some whipped cream on the chocolate cake circle and put an additional cake circle cautiously on the cream and carefully press over. Repeat exactly the same thing until you finish the cake circles.
    Top with a decent amount of chocolate sauce. Relax for 30 minutes after which top each with a few cranberries.
    Keep the cakes inside the fridge.
