"Ooey gooey butter cakes" - even the title gets your mouth watering doesn't it? It certainly does mine.  And the sense of nostalgia it brings settles oh so sweetly in my belly.  The original recipe of gooey butter cakes takes me way back to my childhood - one of those easy recipes Mum was always willing to let me help with and I'd be hanging by that oven with bated breath, literally snorting in that vanillery/buttery goodness emanating from the oven... counting down the minutes that seemed to take hours, then burning my fingers every 5 seconds as I checked over & over if the slice had cooled enough to be cut up once it was out of the oven - of course, copping the odd light slap on my fingers off Mum for my efforts! But it was well worth it for that ooey gooey goodness.

My mother often used a yellow cake mix, or sometimes even lemon, but I've made a marvellous discovery for this recipe: red velvet cake mix.  Not only does it taste delightful, but it looks absolutely ravishing on the plate turning the gooey goodness into a red, chocolately mass of nirvana topped with cream cheese.  The combination truly is heavenly.  It still has all the original flavours there, we've just given it a tasty, bright new look. Trust me - you'll thank me for my modern twist on your trip down nostalgia lane.  So maybe it's time to pass the baton and teach your child this recipe - now you can be the slapper of little fingers and watch his or her delight at taking part in this age-old ritual of mother & child in the kitchen together, cooking - and eating - with love.


INGREDIENTS:

One box red velvet cake mix
Three eggs, divided
Half cup butter, melted
Four cups powdered sugar
One block cream cheese, softened
One & half tea/sp vanilla extract

INSTRUCTIONS:

1. Preheat oven to 180 C and prepare a 9x13 baking dish by giving it a light spray of nonstick cooking oil.
2. Using a large bowl, add the cake mix, one egg and butter.  Stir together well, then evenly press the mixture into the bottom of your baking dish.
3.  In a separate bowl, add your remaining two eggs, vanilla, cream cheese, powdered sugar & combine well.  Now spread this combination evenly on top of your already pressed cake mixture in baking dish.
4.  Bake for 40-45 mins or until it appears to be set.  Allow to cool before slicing and serving
