A great tip if you have some frozen meat in the freezer is to pour about a cap or 2 of vinegar over the flesh of the meat. The vinegar will help to make the meat defrost quicker and also the acid in the vinegar will help to break down the connective tissues in the meat and make it much more tender. Simply rinse the vinegar of the meat once it has defrosted or leave it on if you are cooking a meal that it will help complement the flavour.
