Amazing Vegan Cupcakes
What You Need (for 18 cupcakes)
• 1 ½ cups of almond milk
• ½ teaspoon of baking soda
• 2 cups of all-purpose flour
• 2 teaspoons of baking powder
• 1 cup of white sugar
• 1 tablespoon of apple cider vinegar
• 1 ¼ teaspoons of vanilla extract
• ½ cup of coconut oil, warmed until liquid
• ½ teaspoon of salt
• ½ teaspoon of baking soda
• Frosting of your choice
How to Prepare:
• Preheat your oven to 175 degrees Celsius.
• Grease two 12 cake muffin pans or line with 18 paper baking cups.
• Pour the vinegar into a container and then pour in the almond milk. Let the mixture stand for 5 minutes or till the milk curdles.
• Whisk the flour, baking powder, baking soda, sugar and salt together in a large bowl.
• In another bowl, whisk the almond milk mixture, coconut oil and vanilla extract together.
• Pour the wet mixture into the dry one and stir just until the ingredients blend together.
• Divide the batter evenly into the prepared cups and bake for 15 to 20 minutes or till the tops of the cakes spring back when lightly pressed.
• Let the cupcakes cool in the pan placed over a wired rack.
• When ready to serve, place your favourite frosting on top of the cupcakes and enjoy!
