Lemon Squares
What you will need for the Bars:
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1 cup powdered sugar
1 cup granulated sugar
1/2 cup butter or margarine, softened
3 eggs
1/3 cup lemon juice
2 tablespoons grated lemon peel
1/2 cup chopped pecans
What you will need for the Frosting:
1 cup powdered sugar
2 tablespoons butter or margarine, softened
1 tablespoon half-and-half or milk
What you will need for the Garnish:
1/4 cup chopped pecans
Lemon slices
How to make:
1. Heat oven to 205°C.
2. Grease a pan with shortening and lightly flour.
3. In a small bowl, stir together flour, salt and baking powder and set aside.
4. In another large bowl beat together the powdered sugar, granulated sugar and butter with electric mixer on medium speed scraping the bowl occasionally until the mixture is completely blended.
5. Now beat in 1 egg at a time until blended.
6. On a low speed beat in flour mixture with lemon juice and the flour mixture until well blended.
7. Stir in lemon peel and 1/2 cup pecans.
8. Pour into pan and bake 22 to 27 minutes or until golden brown.
9. For the frosting beat all the ingredients together on low speed until smooth and spreadable.
10. Spread frosting over the warm freshly baked bars and sprinkle with 1/4 cup pecans.
11. Cool completely in pan on cooling rack for about an hour.
12. To create lemon bars cut into 6 rows by 4 rows.
13. Garnish with lemon slices.
