Choc Mint Hedgehog Slice
What you'll need
Hedgehog:
250g scotch finger biscuits, chopped into small pieces
1/2 cup of desiccated coconut
1/2 cup of caster sugar
1/2 cup of chopped hazlenuts OR pecan nuts
1/4 cup of cocoa powder
100g dark chocolate melts
100g butter
1 tablespoon golden syrup
1 egg lightly whisked
Mint Layer:
1 1/4 cup of sifted icing sugar
1 tablespoon of copha
6 teaspoons milk
1 teaspoons peppermint essence
Chocolate topping:
200g dark chocolate melts
50g of cubed unsalted butter
How to make Choc Mint Hedgehog Slice:
Hedgehog Layer:
1. Lightly grease and line a 20cm x 30cm tray with baking paper.
2. In a mixing bowl combine the biscuits, coconut, cocoa, sugar and nuts and set aside.
3. Combine chocolate, butter and golden syrup in a saucepan over low heat. Once melted allow the mixture to cool slightly then add the egg and mix in well. Add the chocloate mix to the dry ingredients and combine well.
4. Press the mixture into the tray and refrigerate until firm.
Mint Layer:
1. Add the sifted icing sugar, copha, milk and peppermint essence to a heatproof bowl and place the bowl over hot water, mix until combined and spreadable.
2. Pour peppermint mixture over the hedgehog base and refrigerate until set.
Chocolate Topping:
1. Combine the chocolate and butter in a bowl and place over a saucepan with water simmering.
2. Once combined pour over the peppermint layer.
3. For a 'wavey' effect in the chocolate topping, allow it to set slightly then use a fork to create the 'wave' effect.
4. Refrigerate until set, then using a hot knife slice up into delicious portions. ENJOY!
