Classic Red Velvet Cake
For the Cake
2.5 cups of all-purpose flour
1.5 cups of sugar
2 tablespoons of unsweetened baking cocoa
1 tablespoon of baking powder
1 teaspoon of salt
1.5 cups of vegetable oil
1 cup of buttermilk
1 teaspoon of vanilla
Red food colour
2 eggs
For the Frosting
1/2 cup of all-purpose flour
1.5 cups of milk
1.5 cups of sugar
1.5 cups of softened butter
1 tablespoon of vanilla
How to make:
1. Heat oven to 180°C.
2. Grease bottoms and sides of 3 round pans with oil and then lightly flour.
3. In large bowl, beat all cake ingredients with electric mixer on low speed 30 seconds, scraping the bowl constantly as you are beating the mixture.
4. Pour into pans.
5. Bake 30 minutes.
6. Cool 10 minutes and then remove from pans to cooling rack.
7. Let the cakes cool completely for about an hour.
8. Now in a medium saucepan mix together 1/2 a cup of flour and 1 1/2 cups milk with whisk until smooth.
9. Cook this over a medium heat until mixture is very thick, stirring constantly.
10. After removing from the heat cool this mixture for 10 minutes.
11. In large bowl, beat 1 1/2 cups sugar and the butter with electric mixer on medium speed until light and fluffy then gradually add the cooked flour mixture by tablespoonfuls.
12. Beat on high speed until smooth and also remember to beat in the vanilla.
13. Fill and frost cake, using 1 cup frosting between layers.
14. Store covered in refrigerator.
