Chocolate Fudge and Peppermint Cream Cheese Frosting Cake
What you will need:
For the cake
A box of Betty Crocker chocolate fudge cake mix
For the Pink Peppermint Cream Cheese Frosting
1/2 a cup of butter (softened)
2 packs of cream cheese (softened)
4 cups of powdered sugar
2 teaspoons of vanilla extract
1 teaspoon of peppermint extract
A few drops of red food color
For the Garnish
14 peppermint candies (7 crushed)
How to make:
1. Prepare the cake as directed on the packaging in two 9-inch rounds pans and then let them cool completely.
2. Now beat the butter and cream cheese together on a medium speed until smooth and fluffy.
3. Reduce speed to low and then gradually add sugar to this mixture and keep beating until smooth.
4. Then add the vanilla, peppermint extract and food colour a drop at a time in to the mixture and keep beating till desired colour is obtained.
5. Split each of the baked cakes horizontally in order to make two layers.
6. Then place each layer on plate and coat with the frosting.
7. Repeat this process with the remaining layers.
8. Place the layers on top of one another and then frost the sides and top of cake with thin coat frosting.
9. Refrigerate for 10 minutes to allow frosting to firm up.
10. Then frost the cake with the remaining frosting.
11. Garnish with peppermint candies.
