How to make a zucchini cobbler


Zucchini Cobbler Recipe
What You Need
• 1 cup of sugar
• 2/3 cup of lemon juice
• 8 cups of chopped zucchini, seeded and peeled
• 1 teaspoon of ground cinnamon
• ½ teaspoon of ground nutmeg
For The Crust Topping
• 2 cups of sugar
• 4 cups of all-purpose flour
• 1 ½ cups of cold butter, cubed
• 1 teaspoon of ground cinnamon
How to Prepare
• Cook and stir the zucchini and lemon juice over moderate heat in a large saucepan for 15 to 20 minutes or till the zucchini is tender.
• Add cinnamon, sugar and nutmeg into the saucepan and let the mixture simmer for 1 more minute. Now remove the saucepan from the heat and set it aside.
• To make the crust, mix the sugar and flour together in a bowl and then mix in the butter till the mixture turns into crumbs. Stir in ½ cup of this into the zucchini mixture.
• Grease a 15 × 10 × 1 inch baking pan and press half of the remaining crumb mixture into the pan.
• Spread the zucchini mixture on top, top with the remaining crumb mixture and sprinkle cinnamon over it.
• Bake this for 35 to 40 minutes or till the bubbly and golden brown at 190 degrees Celsius.
• The Special Zucchini Cobbler is ready!
